PROSECCO BRUT VALDOBBIADENE DOCG SUPERIORE – Cantina TENCONI, VENETO
Produced in the hills of Valdobbiadene it has a straw-yellow color, fine and persistent perlage, a typically fruity aroma, with hints of golden apple and pomegranate, sweet and savory taste. Suitable as an aperitif and between meals, to brighten up meetings and encounters. It is served at a temperature of about 8/10 °.

From the first crystalline reflections the color is straw yellow. The intense and exuberant mousse is accompanied by a very fine, continuous and persistent perlage.
The slow evolution on yeasts gives the nose a complex and essential aroma in its purity: elegant hints of chamomile, wildflowers with accents of acacia and broom expand on notes of fresh hazelnut and almond.
In the mouth explodes in all its elegant freshness underlined by an important minerality and hints of bitter almond.

TASTING NOTES
At the sight straw yellow, rather intense. On the nose intense notes of white flowers, citrus, with mineral hints in the background. We also find notes of quince, mimosa, and, more generally, yellow flowers. On the palate it is decidedly sapid with a strong mineral vein. The freshness is quite intense. Pleasant bitter finish.
COMBINATIONS
Excellent to combine with an aperitif, also recommended for fish dishes such as baccalà alla vicentina.

TASTING NOTES
To our eyes it appears in all its grace with a bright straw yellow. The elegant and whimsical foam is accompanied by a very subtle, continuous and persistent perlage. On the nose it shows itself in all its charm, with elegant hints of white wildflowers and chamomile opening in accents of almond and toast. In the mouth it is enveloping with a fine and fresh texture underlined by memories of peppermint and coffee.

ESPRESSIONE 8 BRUT, Cantina Ricchi - Traditional method VSQ
Vinification The grapes are harvested earlier than the normal
ripening period. Strictly produced in the traditional
method respecting all stages of production.
The sparkling base is generally bottled by june of the
year following the harvest and follows the
refermentation and maturation on the lees in the
bottle. The bottles are stacked in cellars, special
rooms at a controlled temperature and in the
absence of light. After the long fermentation period
the lees are eliminated, with the subsequent addition
of the dosing syrup before final capping.
Ageing Approximately 40 months from the harvest.

Vinification The grapes are harvested in the first 10 days of
september. The white grapes are immediately
soft pressed, while a percentage of the red grapes,
used for the production of sparkling wine are left

BLENDING:
Its singularity lies in the unique balance of its blend of chardonnay, Ruinart’s emblematic grape variety, and pinot noir vinified as a red wine. The fullness and character of the Pinot Noir consolidates the freshness of the Chardonnay.

Made from only Chardonnay using the Traditional Method and sitting on the lees for some ten years. The wine has a bright golden color and a very fine effervescence. The rich and generous bouquet has notes of golden delicious apple, yellow plums and pineapple upheld by a fragrant floral note that plays on scents of hawthorn, acacia flower and chamomile with a hint of gingerbread. The mouthfeel already by the first sip is full and fruity, with a bracing freshness of exotic citrus fruit and citron that exalt the richness of the flavor.

SALISA' TRENTO DOC - ZERO - Villa Corniole Trento
Grape variety: 100% Chardonnay (Blanc de Blancs) vintage
Provenance: vineyards in Valle di Cembra - Trentino, on the slopes of Monte Corona in the CC di Giovo.
Ground: calcareous located at about 500 m of altitude, with exposure to the west, where it is possible to obtain grapes with well-ripened skins with still a high acidic content.
Training system: simple Trentino pergola.
Vinification: after a careful manual selection of the grapes, soft pressing of the whole grapes, using only the grapes
must. Fermentation and aging for about 85/90% in stainless steel tanks at a controlled temperature and the remainder in barriques. Second fermentation in the bottle according to the Classic Method and subsequent long aging on the lees for over 40 months in an underground cellar at a constant temperature. No expedition liqueur is added to the disgorgement.
Service temperature: 10-12 ° C
Pairings: as an aperitif for the most demanding palates. It goes well with dishes based on fish or shellfish, but also with salami and savory cheeses.

Pairings: excellent as an aperitif. It goes perfectly with many fish or vegetable based appetizers, first courses and risottos and fish to taste.
